Baked new potato pebbles & seaweed mayonnaise

Introduction:

Recipe ingredients:

  • 20 baby young potatoes, washed if dirty (but don't peel off the skins just yet)

To make the paste:

  • 1-2 egg whites of medium size
  • Take around 150-250g of flour
  • 2 tbsp seaweed powder is needed (the sea moss)
  • Regarding the mayonnaise made with seaweed
  • 1 egg yolk (make sure you didn’t throw it away when you cracked the eggs for their whites!)
  • 1/2 tsp Dijon mustard
  • 150g rapeseed oil
  • 2 milligrammes of flakes of seaweed
  • 1/2 lemon, juiced

Directions:

 Set oven to 180 degrees Celsius (160 degrees fan) or gas. Put all of the components, including 2 tablespoons of salt, into a food processor and blend them to combine them. This is how you make the pastry. Add up to 50 millilitres of water by pouring it in gently while keeping to pulse the food processor until the mixture stays together when it is pinched.

On a table dusted with flour, lay out the pastry until it is about the thickness of a pound coin; it should be rather rigid. To carefully surround each potato, cut out 20 circles using a 7 cm biscuit cutter (rerolling the trimmings if necessary), and make sure the potatoes are entirely wrapped in the pastry by stretching it slightly if necessary. Place the potatoes in a single layer on a baking sheet and bake at 400 degrees for 40 minutes, or until the pastry is golden brown and a spear inserted into the potatoes reveals that they are tender. The potatoes will remain hot for an additional 15 minutes after being removed from the oven.

Prepare the mayonnaise while the potatoes are in the oven. Put the egg yolk and mustard into a bowl with additional spice, and then use a whisk to combine the three ingredients while very slowly adding the oil until you have a creamy mayonnaise. Combine the sea moss and the juice of one lemon.

Place a bowl of mayonnaise on the side of the potatoes and serve them in a heap. To consume, you just only split open the pebbles and dunk the hot potato into the mayonnaise. You can even dip and eat the pastry as well if that's more to your liking.
