Peppermint Sea Moss Energy Truffles

Ingredients:

1 cup pitted dates

1/2 cup raw almonds or walnuts

1/4 cup unsweetened cocoa powder or cacao powder

2 tbsp prepared sea moss gel

1/2 tsp peppermint extract (or to taste)

Pinch of sea salt

Optional garnish: shredded coconut, crushed pistachios, extra cocoa powder
Instructions:

In a food processor, combine the dates and almonds/walnuts. Process until a sticky, crumbly mixture forms.

Add the cocoa powder, sea moss gel, peppermint extract, and sea salt. Process again until the mixture comes together into a cohesive, somewhat sticky dough. If it’s too dry, add a tiny bit more sea moss gel. If too wet, add a little more cocoa powder.

Roll the mixture into small, bite-sized balls (about 1 inch in diameter).

If desired, roll the truffles in shredded coconut, crushed pistachios, or extra cocoa powder for an extra festive touch.
